Hog Wash

Creation date September 14, 2000

  • 1 Cup Rice Wine Vinegar
  • 1/3 Cup Chopped Shallots
  • 1/3 Cup Cilantro
  • 2 Jalapeno Peppers (seeds removed)

Chop everything up and pour the vinegar on top. Spoon onto your freshly shucked raw oysters

Comments and History

This is affectionately known as Hog Wash, a specialty over at the Hog Island Oyster Company in Marshall, CA. It is best served on a fresh Sweetwater oyster from Tomales Bay.
