How to Store Shellfish

September 25, 2000

Any Quantity of Fresh Shellstock
Oysters, Clams, or Mussels

Keep your shellstock cold while it is in transit to your home. Layer the animals in a large bowl, cover the bowl with a damp towel, and place it on the bottom shelf of your refridgerator. Check the towel mroning and night and rehydrate it as needed. The shellfish will keep for several days in this fashion.

Comments and History

I've given this method out so frequently at the farmers market that it just has to be reproduced here.
